Cookin' Corner

Summer is almost over!
Do you have any zucchini left?

Students, this is a recipe you will want to
ask your parents to cook with you.

Here's a yummy recipe for a Zucchini Casserole!

3C zucchini, sliced
2C carrots, grated
1 sm onion (I used onion about 1tsp flakes.)
1 can cream chicken soup
1/2C sour cream
1/2pkg stuffing mix (I use one whole box.)
1/3C melted butter

Lightly cook zucchini in 1C H2O, drain well. Melt butter in skillet, adding stuffing when melted. Place all ingredients into a mixing bowl except stuffing. Add 1/3C stuffing to the mixing bowl. Mix well. Pour into 9x13 dish, sprinkle with remaining stuffing. Bake 350 degrees until bubbly, about 20 minutes.
 
PS If you and your family grow a garden and have an over abundance of zucchini, I would be more than happy to keep a few from going to waste.  ;-) wink.
